Nacho Mac'n'Cheese Taste of Home Simple and Delicious



3 cups uncooked gemelli or spiral pasta
1 lb ground beef
2 cups chopped sweet red peppers
1/4 cup butter cubed
1/4 cup all purpose flour
1 envelope taco seasoning
1/4 tsp pepper
2 1/4 cups milk
2 cups (8oz) shredded cheddar cheese
1 cup frozen corn, thawed
1 cup coarsely crushed tortilla chips

Cook the gemelli according to pkg directions.


Meanwhile, in dutch oven cook beef and red peppers over med heat until meat is no longer pink; drain.


1 lb ground beef
2 cups chopped sweet red peppers



Stir in butter, flour, taco seasoning and pepper until blended.

1/4 cup butter cubed


1/4 cup all purpose flour



1 envelope taco seasoning


1/4 tsp pepper



Gradually stir in milk.
2 1/4 cups milk

Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat.

Stir in cheese and corn until cheese is melted.

2 cups (8oz) shredded cheddar cheese

1 cup frozen corn, thawed


Drain the gemelli;


 add to the beef mixture and stir to coat. Sprinkle with the tortilla chips.(tortilla chips not pictured)



Yield: 6 servings

We actually added Nacho Doritos on this after we had sat down to eat, it was pretty good as well!
